Carrot Cake

Hey Friends!

I've been enjoying Christmas break and have been using the time to try out new cupcake recipes :) So today I baked Carrot Cake Cupcakes. I thought it'd be a good idea to have a good Carrot Cake recipe down before Easter time :) So, here they are. And they are wonderful! Carrot cake with cream cheese frosting (which has become my new favorite!). Each with a little dash of walnuts and a carrot on top.

Chocolate Chocolate Chip with Chocolate Ganache

Hey Everyone!

First I'd like to start off by saying, MERRY CHRISTMAS!!!

Since it's Christmas Eve and the family isn't coming over until tomorrow, I decided it'd be a great time to bake. I put on the Christmas tunes and tried a new recipe :) Chocolate Chocolate Chip Cupcakes with Chocolate Ganache. And boy, they are delicious!!! So chocolaty and so moist! They are a chocoholic's dream!!! It was my first time making ganache and it's amazing!

If you're ever in the chocolate mood, call on me! I've got the answer ;)

U of M Cupcakes

Go Blue!!!

I got an order to make some University of Michigan cupcakes for a graduation party, so here they are. They are Blue Velvet cupcakes with cream cheese frosting. The same thing as Red Velvet, but with blue food coloring instead :). I wish my camera could have captured the true blue color (you can sort of see in the 4th picture). They're dusted with a little yellow sparkle and topped with stars and hand-cut fondant M's. I thought they turned out pretty cool :)

Red Velvet Snowflake Cupcakes

Hey everyone,

We're having a cook-off at work on Tuesday so I signed up to make a dessert (since baking is what I do :P).

With all the snow coming down today, I was definitely feeling the Christmas spirit! Since they're so gorgeous, I decided to make Red Velvet cupcakes. Today was my first time making Red Velvet cake (in fact, I've actually only eaten it once before) and they turned out amazing. The color is beautiful and they taste even better. They're topped with a cream cheese frosting. Then I finished them off with a white chocolate snowflake that's sprinkled with sugar crystal sprinkles. They look so pretty with the light reflecting off of them!!! Perfect for the season!

I'm sure there will be more Christmas cupcakes to come :)

Banana Cupcakes

Hey guys,

I was in a super baking mood today and had some extra buttermilk that was due to expire soon. So, I made some banana cupcakes with cream cheese frosting. Plus, the banana cake got such rave reviews last time, that I thought I'd make it again (in cupcake form). I have to admit, they are pretty amazing! I also decided to top them with a dried banana slice to give it a nice little finish ;)
